How to open oysters

Oysters are one of the most delicious dishes that can be taken. However, before doing so you will need to do one thing: open them. Opening oysters can be a more complicated task than it seems at first and, if it is not done well, it can end up causing you to spoil the oysters or at least not be as delicious as they could.

How to know if an oyster is in bad shape

  • The shell is open: The first thing we should consider to know if an oyster is alive is that the shell is closed. An oyster with an open shell will be an oyster that is already dead and, in this case, it will be an oyster that we must discard to avoid any possible poisoning.
  • The shell smells strong or bad: Secondly, another element that will indicate if an oyster is good or not is its smell. The smell of an oyster in good condition has to be fresh, it is usually compared to the smell of the sea. A smell that is sweet and salty at the same time but, above all, a fresh smell. If an oyster smells excessively strong, or smells like past fish, it will be an oyster in poor condition, so we must immediately discard it.
  • The shell weighs little: finally, the third element that will tell us if an oyster is in good condition or not to eat it is going to be its weight. When an oyster remains with the shell closed, it stores seawater inside. This is usually an indication that the oyster is alive and in good condition to eat. If when holding the oyster we notice that the weight does not correspond to its size we should doubt that oyster, since it is possible that it is in poor condition even though the shell has not opened completely.

How to open oysters without openers

Once we know differences in oysters in good condition from those that are not, we can embark on the challenge of opening it. This is going to be more complicated than it may seem at first, so the first thing we will have to keep in mind is that We will need the right tools:

  • Kitchen knife
  • Protective gloves

Before opening the oysters with a knife, it is recommended to clean them on the outside with cold water and with an appropriate brush, since it will allow to remove remains of sand and chips from the shell that could fall at the time of opening. The process of opening an oyster is simple but requires the correct technique.

  1. In one hand we will hold the oyster, with the concave part of the shell next to the palm of our hand, while the smooth part of the shell will remain up and visible all the time.
  2. From this position, with the gloves at all times, we will take the knife (which should be large, resistant and well sharpened) with the other hand and introduce the tip between both shells first.
  3. Next, we will maneuver so that we can open more part of the knife blade and, when tilted, we will exert force to open the shell.
  4. The moment we hear the characteristic opening sound, it will be when we can easily remove one of the shells and move on to the next oyster.
  5. During the whole process, it is very important not to tilt the oyster, so that it keeps all the inner juice even after it is opened.

Once we open the oysters, we will deposit them in an ice bed on a plate so that they are kept in good condition from the moment we open them until we serve them at the table. To consume it, we can do it directly or by adding a few drops of lemon juice.
