Making meringue is very simple, however it is important to consider the technique to get it to lift properly, serving as decoration for your desserts.
To start, check egg whites in a large enough bowl, since later they will increase greatly in size. It is recommended to remove the eggs from the refrigerator beforehand so that they are at room temperature.2

When you have reached the desired point, let the meringue stand few minutes and check that there are no remains of clear without beating in the bottom to prevent it from getting off.4
Add the powdered sugar slowly and keep stirring so that it is well integrated. If you use normal white sugar, it will be necessary to beat for a longer time so that it dissolves completely and does not become granulated.5
When you have added all the sugar, continue beating until the mixture is bright and foamy. You will know that the meringue has acquired the ideal texture when hard peaks begin to form or what is also known as the "bird beak", due to its similarity to this part of the birds.6
