Before you start preparing the brioche dough you must have all the ingredients ready. To do this, we recommend that you remove the butter a few minutes before the refrigerator so that it acquires an ambient temperature and cuts it into pieces. As for the rest, you should know that of the 4 eggs only 3 will be used whole. So, of the leftover egg, separate the white from the yolk. We will use the yolk for the dough, the white to paint the brioches. We recommend that you use powdered milk and water, but if you do not have the powdered variant you can also substitute these two ingredients for 100ml of warm milk.


Now, let's start! First, start mixing the fresh yeast with water, or milk, do it in a container with sufficient capacity. In another smaller container, sift the flour and mix it with the milk powder and the sugar (if you opted for this option).

When you have everything ready, add flour and milk powder to the big container, where you have the yeast and the water. Mix everything and add the 3 whole eggs, the 4th yolk and the Butter. Add a pinch of salt. You can remove with manual or electric rods. If you have a kitchen robot or electric rods we recommend that you use them because you should be stirring for 20 to 30 minutes, until the dough takes a certain consistency.

After 20 minutes the dough will have taken shape and you can make a ball with it. If you use manual rods we advise you to knead with your hands as soon as the dough begins to take solid form. Make a ball with the dough and cover the container with plastic wrap or a clean dry cloth so that rest and take volume. Leave it for an hour and, after this time, put it in the fridge to leave it overnight.

The next day remove it from the refrigerator and let it take a room temperature. Meanwhile, preheat the oven to 180ºC, up and down. When it stops being cold, break the dough and work it a little with your hands. Make individual balls, paint them with the egg white and place them on a baking sheet. You can also sprinkle some thick sugar. If you prefer, you can take molds suitable for cupcake or cupcake ovens to introduce homemade brioche balls.

You must bake the homemade brioche for 15-20 minutes, depending on the power of your oven. Watch that they do not burn and, if you need more time, leave them a few minutes.
