Cook the potatoes with skin in plenty of water for about half an hour.


Let the potatoes and peel cool.


Split them into regular or square pieces.


Add salt to your liking.


Cut the garlic clove into small pieces and mash it with a mortar until it is a fine paste.


Put the garlic paste in a bowl and add the mayonnaise.


Mix everything until the sauce is to your liking.


Cover the potatoes with the aioli sauce and sprinkle the parsley on top.
